  7. Make ready 2 1/4 tbsp salted butter, room temperature

This is a simple enriched bread made with flour, milk, yeast, butter and egg. Since this is an enriched dough, I did not want to take the egg away from the bread. Put bread on a sheet metal, covered with backing paper, sweep with water. Before baking, sweep with the yellow of an egg.

Instructions to make Zopf/ Swedish bread:
  1. Dissolve yeast in warm milk and sugar in small bowl. Proof several minutes.
  2. In a large mixing bowl with dough hook attachment add egg yolk, butter, and flour, proofed yeast in milk.
  3. Blend on low for 2 minutes.
  4. Continue to beat on low speed for 6 minutes. This simulates kneading.
  5. On lightly floured surface , divide the dough into three equal pieces.
  6. Roll each section into a 16" rope.
  7. Braid pieces together and place on greased cooking tray.
  8. Cover with a damp cloth and let the dough rise for 1 hour. It should double in size. It is important at this step to keep dough in a warm area.
  9. Now preheat oven to 425°F. Beat egg white and brush over dough. Bake 20-25minutes or until a lovely golden brown.
  10. Enjoy this bread warm out off the oven!

Put bread on a sheet metal, covered with backing paper, sweep with water. Before baking, sweep with the yellow of an egg. This Swiss Braided Bread contains milk and butter, which gives it a lovely soft texture. It's important to allow a long enough rise time after kneading and then again after shaping. Add all the ingredients into the pan according to the order in the manufacturer's instructions.
