- Brown the chicken in 1 tablespoon of olive oil. About 3-4 minutes.

- Add the garlic, chillies and paprika and a pinch of salt. Fry for a further 2-3 minutes.
- Add the chicken back to the pan with half of the stock. Simmer for 20-25 minutes on low heat.
- Add the rice to the pan and remainder of stock and seal with lid. Simmer for a further 30 minutes on a low heat or until the liquid has all been absorbed. And rice is cooked. Stir occasionally.
- Add the prawns 10 minutes after the rice and simmer for the remainder of the 30 minutes.
- Check seasoning and let the paella rest for 5-10 minutes.
- When its cooked, sprinkle some chopped parsley or coriander over the rice.
