Cook the chicken until browned on both sides and remove. Add the sausage and cook until browned, then remove. You will have to stir almost constantly. With a dark roux, the "holy trinity" of aromatic vegetables—onion, green pepper, and celery—tender chicken, spicy andouille sausage, and your choice of thickener (okra, filé powder, or both), this Cajun-style gumbo has it all.

  4. Rinse shrimp in cold water for about 5 minutes then sprinkle with seafood seasoning
  5. Add potatoes, crab meat, polish sausage, shrimp, chicken breast, and frozen okra then stir
  6. Add red crushed peppers
  7. Place a lid on the pot. Let it cook for about 30 minutes or until rice is done
