Instructions to make Quick & Easy Fruit Cake:
- Rub the butter into the flour until it looks like fine breadcrumbs, add sugar and dried fruit and mixed spice, if using.

- If you mix the flour, sugar and butter in a mixer with the blade attachement until you reach the breadcrumb stage and then freeze, just remove from the freezer add the rest of the ingredients and bake as and when you need.
