Steps to make Egusi soup:
- Season your fish and with onion, salt and stock cubes. Allow to cook for about 10mins. Remove you fish, wash your stock fish and add in to the pot. Leave to simmer for about 5mins more.
- I set a pot with my oil on fire, add onion, fry till it's translucent and then pour in my pounded/blended tomatoes and pepper mix. Fry till it's dry and the sour taste is gone. Then pour in your meet stock and meat with stock fish
- I stirred together, and covered. Then bring to a boil. Mix your egwusi with an onion and cut in lumps tonight your soup. Cover and cook for about 15mins. Stir together and add your fish.
- Stir in your Bitterleaf first. Stir very well and pour your ugu leaf.add your crayfish, stir together and Your soup is ready
- Enjoy with akpu or any swallow of your choice ππ
