Mix together the vinegar, salt, pepper, garlic, onion, and olive oil in a large resealable bag until the salt has dissolved. Season the lamb with salt and pepper; do not scrape off the garlic or rosemary. Grill the lamb over a hot fire, turning often, until an instant-read thermometer inserted in each. Sprinkle salt and pepper over the racks of lamb.

Instructions to make Grilled Lamb:
  1. Mix all ingredients.
  2. Place lamb in a large Ziploc bag, Pour ingredients into bag, then seal bag. Place in fridge and marinate lamb at least 6 hours, or overnight
  3. Preheat grill to 500 F. Bring lamb to room temperature then grill lamb for 20 minutes for medium rare, turning over once. 25 minutes for medium.
  4. Remove from grill, cover with foil and let lamb rest for 10 minutes
  5. Slice lamb into 1/4 inch slices and serve on pre-warmed plates
  6. PS: You can place the leftover marinade in a pan, bring to boil, add 1 table spoon of butter then simmer for 7 - 8 minutes and serve with the lamb

Reserve a small amount of the mustard mixture for basting while on the grill. Preheat the grill to medium heat. Cooking very tough meats, such as lamb shank, involves some compromises.
